Vegan Blueberry Pancake Bowl Recipe

  • 135g plain flour (1 cup)
  • 250ml dairy free milk (1 cup)
  • 2 tbsp baking powder
  • 100g blueberries (3/4 cup)
  • 2 tbsp sugar
  • 2 tbsp olive oil/coconut oil (plus extra for greasing)
  • Zest of a lemon
  • Juice of half a lemon
  • 1 tbsp maple syrup


  1. In a large bowl, combine the flour, baking powder, sugar, and 25g blueberries.
  2. Then will, gradually blend the milk and oil. Be sure not to overwork the batter.
  3. After that, add a tsp of coconut oil in a large skillet or frying pan. After the butter has melted, put equal portions of batter into the pan and heat on medium.
  4. Wait for bubbles to appear on the surface (a few minutes), then gently flip till golden. Be aware that after you flip the pancake, it will take less time for the other side to get golden.
  5. Clean the pan with kitchen paper between batches of pancakes and re-oil it.
  6. Keep pancakes warm in a tea towel.
  7. As the pancakes are cooking, add 75g blueberries, 1 tbsp maple syrup, and the juice of half a lemon in a skillet. Stir constantly over high heat until a sauce forms.
  8. Pour sauce over pancakes and sprinkle with lemon zest.

PSB fitness is offering a variety of fitness programs for students. Stretching, weight training, gymnastics, aerobics, yoga, meditation, cardio, zumba and bhangra dance classes. We are also having sauna baths and swimming pool. we are offering new students as a complementary for their first 3 months of joining. We are fully equipped with all the training equipment and well qualified trainers and dietitians. Who are always ready to go for training new members with all their experiences. A special diet plan for every member according to their body weight and requirement will be prepared by dietitians to make sure they are taking healthy and nutritious diet according to diet plan which is more important than the workout plan to prepare body for the routine exercise.

That’s why we offer our nutritionist for all of our gym members and Sheridan students at PBS fitness.

Firstly, you will have a one on one meeting with our nutritionist.

Here we will discuss your goals and dietary restrictions.

Secondly, we will develop a diet plan to reflect your goals.

Our nutritionist will provide recipes to cook meals and links to grocery stores to buy products.

Lastly, you can monitor your success through our cloud app unique to PBS fitness.

When you download the cloud app you will be able to access information from your nutritionist, keep daily logs which track your diet, fitness, mood and energy. As a result we will use this information to continue to develop meal plans that change as your goals change.
